AVO CAZPACHO

INGREDIENTS:

8 large tomatoes - deseeded

1 capsicum - deseeded

1 cucumber - deseeded

1 red onion - chopped

2 garlic cloves - peeled

Flesh of 1 avocado

Juice of 1 lime

Chilli flakes to serve

METHOD:

Place all ingredients, salt and pepper in a thermomix or high powered blender.

Blend, adding cold water if too thick.

Chill for 20 minutes and drizzle with olive oil and chilli flakes to serve.
