RAW PAD THAI SALAD

INGREDIENTS

2 carrots

2 zucchinis

1/2 bag bean sprouts

2 spring onions - thinly sliced

1 cup edamame - blanched

1/2 cabbage - finely shredded

2 tbs maple syrup

2 tbs lime juice

1/4 cup almond butter

1 tbs sesame oil

1 garlic clove - crushed

1cm ginger - grated

METHOD

Use a spiralizer to make noodles from the carrots and zucchinis.

Mix carrots, zucchinis, bean sprouts, spring onions, edamame, cabbage in a large bowl to create your rainbow salad.

Place remaining ingredients in a small jar and shake to combine.

Pour over salad before serving.
