SLOW COOKER JACKFRUIT STEW

INGREDIENTS

3 cans jackfruit

2 tsp onion powder

1 tsp garlic powder

1 tsp ginger powder

himalayan salt and pepper

1 onion - chopped

2 carrots - chopped

4 celery stalks - chopped

1/4 cup tamari

1/4 cup honey

1 can coconut cream

2 tsp sriracha

1 tsp fish sauce (omit for vegan)

3 medium sweet potatoes

2 tbs butter (omit for vegan)

METHOD

Drain the jackfruit from the cans and take out the triangles.

Cut the point of the triangle off and discard, the remaining part is the best at shredding.

Place jackfruit in a bowl with onion, garlic and ginger powder, salt and pepper and mix until coated.

Add the the slow cooker with onion, carrots, celery, tamari, honey, coconut cream, sriracha and fish sauce and cook on low for 6-8 hours.

When the stew is almost ready, prepare your sweet potato mash by boiling the sweet potato until tender and mashing with organic butter and salt.
