TUMERIC PUMPKIN +QUINOA BITES

INGREDIENTS:

1/4 diced red onion

1/4 cup crumbled feta

1/2 tsp tumeric

1/2 cup cooked quinoa

1 can chickpeas

1 tsp olive oil

1.5 cups roasted pumpkin

1 cup buckwheat flour

Salt and pepper

1 tsp parsley

METHOD:

Cook pumpkin in oven with olive oil until soft.

Combine mashed chickpeas, pumpkin, feta, onions, turmeric, salt and pepper and flour with chopped parsley.

Roll into balls and fry until golden brown.
