ORANGE CAKE

INGREDIENTS:

4 oranges

1/2 cup coconut sugar

4 eggs

2 cups almond meal

1/2 tsp baking powder

Maple syrup

METHOD:

Place whole oranges into cold water and bring to boil.

Whisk eggs and coconut sugar. Add tbsp orange zest and freshly squeezed/ cooled orange juice.

Gently fold through baking soda and enough almond meal to create a smooth, runny consistency. Leave to settle about 15 mins before placing in oven at 170 degrees until golden.

For a golden glaze, drizzle some maple syrup over the top!
