FISH FINGERS

INGREDIENTS:

500g firm white fish fillets

1 egg

100g almond meal

zest from 1 lemon

1/2 tsp garlic powder

1/4 tsp chilli powder (optional)

METHOD:

Preheat the oven to 200 degrees and line a baking tray with paper. Cut the fish into desired size and season with Himalayan salt and pepper. In a bowl, whisk the egg. Place almond meal, zest, garlic and chilli in a separate bowl and mix to combine. Dip each fish fillet into egg and then coat with almond mix. Place on baking tray and repeat. Bake for 15 minutes or until wish is cooked through.
