GREEN QUINOA CAKES

INGREDIENTS

1 cup almond meal

1/4 cup shredded coconut

2 zucchinis - grated

1 carrot - grated

1 cup cooked quinoa

1 tsp sea salt

1 tbs turmeric

2 eggs

METHOD

Mix all ingredients in a bowl until well combined.

The mixture should be moist and stay together.

Heat coconut oil in a fry pan over a medium high heat.

Roll 1/4 cup of the mixture and shape into a pattie shape and cook each side until browned.

Serve with a raw salad or some steamed green vegetables.
