QUICK GREEN BREAKFAST BOWL

INGREDIENTS

4 eggs

1 tbs coconut oil

1 clove garlic - minced

2 big handfuls of snow peas

juice from 1 lime

himalayan salt and pepper

1 ripe avocado - peeled, deseeded and sliced

1 stalk spring onion - chopped

1 tsp chia seeds

METHOD

To poach eggs, set a pot of hot water from the kettle on the stove at high heat and add a drop of vinegar.

Crack one egg into a small bowl.

Stir the boiling water to create a whirlpool and slowly tip the egg into the centre. Repeat with remaining eggs.

Cook for 4 minutes or until the white is set and lift out with a slotted spoon.

While the eggs are cooking, heat a pan over medium high heat and add coconut oil and garlic.

Cook for 1 minute then add snow peas, cooking and tossing until bright green and a little charred in parts.

When finished, squeeze 1/2 lime juice over the top and season with salt and pepper.

Serve snow peas, sliced avocado and poached eggs with a side of paleo toast if desired.

Squeeze remaining lime over the avocado.

Top with spring onion and sprinkle over chia seeds.
