RUSTIC BEANS

INGREDIENTS

1 tbs coconut oil

1 large onion - chopped finely

2 cloves garlic - crushed

1/2 tsp mustard powder

1/2 tsp mustard seeds

1 can organic diced tomatoes

1 tsp tomato paste

1 tbs raw honey or maple syrup

1/2 cup water

1 tbs apple cider vinegar

1 tbs worchestershire sauce

1 can white beans - drained and rinsed

1 can red kidney beans - drained and rinsed

1 can chickpeas - drained and rinsed

himalayan salt and pepper to taste

METHOD

Saute onion over low heat until soft.

Add garlic and mustard powder and seeds and stir through.

Add all remaining ingredients and stir to combine.

Cover with lid and allow to simmer for 5-10 minutes

Remove lid and allow sauce to thicken over low heat - around 20 minutes.

Taste and add seasoning if needed.

Serve with fresh parsley, spinach and goats feta on organic sourdough bread.
