NOT BORING GREEN SALAD
INGREDIENTS
1/2 iceberg lettuce
1 bag mixed salad leaves
1 Lebanese cucumber
1 bag frozen edamame
1 avocado
Salad sprinkle legumes
DRESSING
1/4 cup olive oil
2 tbsp white wine vinegar
1 tbsp whole grain mustard
1 tsp maple syrup
METHOD
Wash salad leaves and pop into a salad bowl.
Soak edamame in boiling water.
Peel ribbons of cucumber and add to salad bowl.
Dice avocado and add to bowl.
In a mixing bowl add olive oil, vinegar, mustard and maple syrup and whisk.
Add edamame to salad and a couple of handfuls I’d salad sprinkles.
Drizzle dressing over the top and toss to combine
